Cauliflower Biryani Ingredients:
- 1 whole cauliflower (cut into large pieces)
- 3 large potatoes (halved)
- 2 cups basmati rice
- 1 cup onion (sliced)
- 2 tomatoes (chopped)
- 1/2 cup yogurt
- 2 green chilies (chopped)
- 1 tsp ginger-garlic paste
- 1/2 tsp turmeric powder
- 1 tsp cumin powder
- 1 tsp coriander powder
- 1/2 tsp biryani masala powder
- 1/2 cup oil or ghee
- 2 cups water
- 1 tsp salt (adjust to taste)
- 1/2 tsp sugar
- 1/4 cup coriander leaves (chopped)
- 2 bay leaves
- 4 cloves
- 2 cinnamon sticks
- 4 cardamoms
- 1 tsp garam masala powder
Instructions:
1. Prepare Cauliflower and Potatoes:
- Wash and cut the cauliflower into large pieces.
- Cut the potatoes into halves.
- Heat oil in a pan and fry the cauliflower and potatoes until golden brown. Set aside.
2. Soak the Rice:
- Rinse the basmati rice thoroughly and soak it in water for 30 minutes.
3. Prepare the Base:
- Heat oil or ghee in a large pan.
- Add bay leaves, cloves, cinnamon, and cardamom. Let them sizzle for a few seconds.
- Add sliced onions and fry until they turn golden brown.
4. Add Spices and Tomatoes:
- Add ginger-garlic paste and green chilies. Sauté for 1-2 minutes.
- Add turmeric powder, cumin powder, and coriander powder. Mix well.
- Add chopped tomatoes and cook until soft.
5. Add Yogurt and Vegetables:
- Stir in the yogurt and mix thoroughly.
- Add the fried cauliflower and potatoes. Let them cook with the spices for a few minutes.
6. Cook the Rice:
- Add the soaked basmati rice to the pan.
- Pour in 2 cups of water, then add salt and sugar.
- Cover the pan and cook on medium heat until the rice is fully cooked and water is absorbed.
7. Garnish and Serve:
- Sprinkle chopped coriander leaves and biryani masala powder on top. Gently mix to combine.
- Serve hot with raita or salad.
