Secret Ingredient for Cauliflower Biryani Recipe

Cauliflower Biryani Ingredients:

  • 1 whole cauliflower (cut into large pieces)
  • 3 large potatoes (halved)
  • 2 cups basmati rice
  • 1 cup onion (sliced)
  • 2 tomatoes (chopped)
  • 1/2 cup yogurt
  • 2 green chilies (chopped)
  • 1 tsp ginger-garlic paste
  • 1/2 tsp turmeric powder
  • 1 tsp cumin powder
  • 1 tsp coriander powder
  • 1/2 tsp biryani masala powder
  • 1/2 cup oil or ghee
  • 2 cups water
  • 1 tsp salt (adjust to taste)
  • 1/2 tsp sugar
  • 1/4 cup coriander leaves (chopped)
  • 2 bay leaves
  • 4 cloves
  • 2 cinnamon sticks
  • 4 cardamoms
  • 1 tsp garam masala powder

Instructions:

1. Prepare Cauliflower and Potatoes:

  • Wash and cut the cauliflower into large pieces.
  • Cut the potatoes into halves.
  • Heat oil in a pan and fry the cauliflower and potatoes until golden brown. Set aside.

2. Soak the Rice:

  • Rinse the basmati rice thoroughly and soak it in water for 30 minutes.

3. Prepare the Base:

  • Heat oil or ghee in a large pan.
  • Add bay leaves, cloves, cinnamon, and cardamom. Let them sizzle for a few seconds.
  • Add sliced onions and fry until they turn golden brown.

4. Add Spices and Tomatoes:

  • Add ginger-garlic paste and green chilies. Sauté for 1-2 minutes.
  • Add turmeric powder, cumin powder, and coriander powder. Mix well.
  • Add chopped tomatoes and cook until soft.

5. Add Yogurt and Vegetables:

  • Stir in the yogurt and mix thoroughly.
  • Add the fried cauliflower and potatoes. Let them cook with the spices for a few minutes.

6. Cook the Rice:

  • Add the soaked basmati rice to the pan.
  • Pour in 2 cups of water, then add salt and sugar.
  • Cover the pan and cook on medium heat until the rice is fully cooked and water is absorbed.

7. Garnish and Serve:

  • Sprinkle chopped coriander leaves and biryani masala powder on top. Gently mix to combine.
  • Serve hot with raita or salad.
