Chanar Biryani Ingredients:
- Paneer (Chana): 300 grams
- Potatoes: 3 large (cut in halves)
- Basmati rice: 2 cups
- Tomatoes (chopped): 2
- Yogurt: 1/2 cup
- Green chilies (chopped): 2
- Ginger paste: 1 teaspoon
- Turmeric powder: 1/2 teaspoon
- Cumin powder: 1 teaspoon
- Coriander powder: 1 teaspoon
- Biryani masala powder: 1/2 teaspoon
- Oil or ghee: 1/2 cup
- Water: 2 cups
- Salt: 1 teaspoon (as per taste)
- Sugar: 1/2 teaspoon
- Coriander leaves (chopped): 1/4 cup
- Bay leaves: 2
- Cloves: 4
- Cinnamon sticks: 2
- Cardamoms: 4
- Garam masala powder: 1 teaspoon
Cooking Steps:
1. Prepare the paneer and potatoes:
- Mash the paneer (chana) and make small balls (kofta). Fry them until golden and set aside.
- Fry the potato pieces until golden and set aside.
2. Prepare the rice:
- Wash the basmati rice and soak it in water for 30 minutes.
3. Start cooking:
- Heat oil or ghee in a large pan.
- Add bay leaves, cloves, cinnamon, and cardamoms. Fry for a few seconds.
4. Cook the spices:
- Add ginger paste and chopped green chilies. Fry for 1-2 minutes.
- Add turmeric powder, cumin powder, and coriander powder. Mix well.
5. Add tomatoes:
- Add chopped tomatoes and cook for 2-3 minutes.
- Add yogurt and mix well.
6. Add potatoes:
- Add the fried potatoes to the spice mixture. Cook for a few minutes.
7. Cook the rice:
- Add the soaked rice, 2 cups of water, salt, and sugar.
- Cover the pan and cook on medium heat until the rice is cooked.
8. Add paneer balls:
- Once the rice is cooked, gently add the fried paneer balls (kofta). Stir carefully to avoid breaking them.
9. Finish with garnishing:
- Sprinkle chopped coriander leaves and biryani masala powder on top.
10. Serve hot:
- Mix gently and serve your delicious Chanar Biryani hot!
