Secret Ingredient for Chanar Biryani Recipe

Chanar Biryani Ingredients:

  • Paneer (Chana): 300 grams
  • Potatoes: 3 large (cut in halves)
  • Basmati rice: 2 cups
  • Tomatoes (chopped): 2
  • Yogurt: 1/2 cup
  • Green chilies (chopped): 2
  • Ginger paste: 1 teaspoon
  • Turmeric powder: 1/2 teaspoon
  • Cumin powder: 1 teaspoon
  • Coriander powder: 1 teaspoon
  • Biryani masala powder: 1/2 teaspoon
  • Oil or ghee: 1/2 cup
  • Water: 2 cups
  • Salt: 1 teaspoon (as per taste)
  • Sugar: 1/2 teaspoon
  • Coriander leaves (chopped): 1/4 cup
  • Bay leaves: 2
  • Cloves: 4
  • Cinnamon sticks: 2
  • Cardamoms: 4
  • Garam masala powder: 1 teaspoon

Cooking Steps:

1. Prepare the paneer and potatoes:

  • Mash the paneer (chana) and make small balls (kofta). Fry them until golden and set aside.
  • Fry the potato pieces until golden and set aside.

2. Prepare the rice:

  • Wash the basmati rice and soak it in water for 30 minutes.

3. Start cooking:

  • Heat oil or ghee in a large pan.
  • Add bay leaves, cloves, cinnamon, and cardamoms. Fry for a few seconds.

4. Cook the spices:

  • Add ginger paste and chopped green chilies. Fry for 1-2 minutes.
  • Add turmeric powder, cumin powder, and coriander powder. Mix well.

5. Add tomatoes:

  • Add chopped tomatoes and cook for 2-3 minutes.
  • Add yogurt and mix well.

6. Add potatoes:

  • Add the fried potatoes to the spice mixture. Cook for a few minutes.

7. Cook the rice:

  • Add the soaked rice, 2 cups of water, salt, and sugar.
  • Cover the pan and cook on medium heat until the rice is cooked.

8. Add paneer balls:

  • Once the rice is cooked, gently add the fried paneer balls (kofta). Stir carefully to avoid breaking them.

9. Finish with garnishing:

  • Sprinkle chopped coriander leaves and biryani masala powder on top.

10. Serve hot:

  • Mix gently and serve your delicious Chanar Biryani hot!
