Chicken Biryani Ingredients
🍁 For Marination:
- 700 grams chicken
- 1 cup yogurt
- 1 tbsp ginger-garlic paste
- 1 tsp turmeric powder
- 1 tsp red chili powder
- 1 tsp garam masala
- Salt to taste
🍁 For Rice:
- 2 cups basmati rice
- 3-4 green cardamoms
- 4-5 cloves
- 1-inch cinnamon stick
- 2 bay leaves
- Salt to taste
🍁 For Biryani:
- 2 large onions, thinly sliced
- 4 large potatoes, cut in halves
- 2 large tomatoes, chopped
- 2-3 green chilies, slit
- 2-3 tbsp ghee or oil
- 1 tbsp ginger-garlic paste
- 1/2 cup biryani masala
- 1/2 tsp saffron strands (soaked in 2 tbsp warm milk)
- 1/2 cup milk
- 1/4 cup fried onions (optional)
- 1 tbsp rose water (optional)
- 1 tbsp kewra water (optional)
Instructions
- Marinate the Chicken
In a bowl, mix yogurt, ginger-garlic paste, turmeric powder, red chili powder, garam masala, and salt. Add the chicken and mix well. Let it marinate for 1 hour. - Prepare the Rice
Wash the basmati rice and soak it for 30 minutes. Drain the water. Boil water in a large pot. Add cardamoms, cloves, cinnamon, bay leaves, and salt. Add the soaked rice and cook until 70-80% done. Drain the water and set aside. - Cook the Chicken
Heat oil in a large pot. Fry the sliced onions until golden brown. Add ginger-garlic paste and fry for a minute. Add green chilies and chopped tomatoes. Cook until the tomatoes turn soft. Add the marinated chicken and halved potatoes. Cook on medium heat until the chicken and potatoes are tender. This may take around 45 minutes. - Layer the Biryani
Take a heavy-bottomed pot. First, place a layer of cooked chicken and potatoes. Then, add a layer of the partially cooked rice. Sprinkle biryani masala, saffron milk, rose water, kewra water, and fried onions (if using). Repeat the layers, ending with a layer of rice on top. - Cook on Dum (Low Heat)
Cover the pot tightly with a lid or seal it with dough. Cook on very low heat for 20-30 minutes. This allows the flavors to blend and the rice to cook fully. - Serve and Enjoy
Before serving, gently mix the layers. Serve hot with raita or salad.
