Mutton Biryani Ingredients

🍁 For Marination:

  • 700 grams mutton (with bone)
  • 1 cup yogurt
  • 1 tbsp ginger-garlic paste
  • 1 tsp turmeric powder
  • 1 tsp red chili powder
  • 1 tsp garam masala
  • Salt to taste

🍁 For Rice:

  • 2 cups basmati rice
  • 3-4 green cardamoms
  • 4-5 cloves
  • 1-inch cinnamon stick
  • 2 bay leaves
  • Salt to taste

🍁 For Biryani:

  • 2 large onions, thinly sliced
  • 4 large potatoes, cut in halves
  • 2 large tomatoes, chopped
  • 2-3 green chilies, slit
  • 2-3 tbsp ghee or oil
  • 1 tbsp ginger-garlic paste
  • 1/2 cup biryani masala
  • 1/2 tsp saffron strands (soaked in 2 tbsp warm milk)
  • 1/2 cup milk
  • 1/4 cup fried onions
  • 1 tbsp rose water
  • 1 tbsp kewra water

Instructions

  1. Marinate the Mutton
    In a large bowl, mix yogurt, ginger-garlic paste, turmeric powder, red chili powder, garam masala, and salt. Add the mutton and coat well. Cover and refrigerate for at least 2 hours or overnight.
  2. Prepare the Rice
    Wash the basmati rice and soak it for 30 minutes. Drain the water. Boil a large pot of water. Add cardamoms, cloves, cinnamon, bay leaves, and salt. Add the soaked rice and cook until 70-80% done. Drain the water and set the rice aside.
  3. Cook the Mutton
    Heat ghee or oil in a large pot or pressure cooker. Fry the sliced onions until golden brown. Add ginger-garlic paste and fry for a minute. Add green chilies and chopped tomatoes. Cook until the tomatoes are soft. Add the marinated mutton and halved potatoes. Cook on medium heat until the mutton turns brown and the potatoes are tender. This may take 45 minutes to 1 hour in a pot or 20-25 minutes in a pressure cooker.
  4. Layer the Biryani
    Take a heavy-bottomed pot. Start with a layer of cooked mutton and potatoes. Add a layer of the partially cooked rice on top. Sprinkle biryani masala, saffron milk, rose water, kewra water, and fried onions. Repeat the layers, ending with a layer of rice on top.
  5. Cook on Dum (Low Heat)
    Cover the pot tightly with a lid or seal it with dough to trap the steam. Cook on very low heat for 20-30 minutes. This allows the flavors to blend and the rice to cook completely.
  6. Serve and Enjoy
    Before serving, gently mix the layers of biryani. Serve hot with raita or salad.
